Do Not Double-Dip

Ep.7 · Kushikatsu and the rule from 1929

FitTrip Editor · 2026.07.20

Kushikatsu is meat, vegetables and seafood skewered and deep-fried, and it is the food that represents Shinsekai. Daruma, known as the original kushikatsu house, opened its main shop in 1929. The district’s most famous rule — no double-dipping — is a hygiene practice that began there and is now the common rule across Shinsekai. Because many customers share the same sauce pot, a skewer you have bitten does not go back in; if you want more sauce, scoop it with the cabbage served alongside. It is a case of one shop’s rule becoming a whole district’s custom, and effectively the only etiquette a traveller must observe here.

This district has effectively one rule to observe. And that one rule is posted on the wall of nearly every shop.

Fried on a skewer

Kushikatsu is meat, vegetables or seafood skewered and deep-fried Fact. It is the food that represents Shinsekai, with specialist shops concentrated in Janjan Yokocho and the alleys of Ep.6 Fact. Daruma, known as the original kushikatsu house, opened its main shop in 1929 Fact.

Where the rule came from

The district’s most famous rule — never dip twice — is a hygiene practice that started there and is now the common rule across Shinsekai Fact. The logic is simple: many customers share the same sauce pot, so a skewer you have already bitten does not go back in Estimate. If you want more sauce, scoop it with the cabbage served alongside Estimate.

How a rule becomes a culture

What is interesting is the rule’s career. One shop’s hygiene practice became the whole district’s common rule Fact, and is now inseparable from any introduction to Shinsekai. The paradox of Ep.2 repeats here — what stayed and became the district’s identity did not come from the plan above but started in a shop Estimate.

How to eat

In practice: order a few at a time and widen the range, dip once and once only, and use the cabbage when you want more Estimate. Batter and sauce differ from shop to shop, so comparing two or three is a natural way to eat here Estimate. Expect queues at some shops in the evening.
